Menu Plan Monday

I know this is Menu Plan Monday but I didn’t get around to doing my weekly plan until today. I haven’t been motivated to go to the store yet this week so please bare with me as this week te menu is pretty boring. I’m still posting what we had the other nights even though the choices I made for those nights weren’t great.

MondayLasagna

Tuesday: The girls had Macaroni and cheese with broccoli and my husband and I had take out.

Wednesday: Inside out Pizza Triangles – adapted from Quick Pizza Triangles - I looked in the fridge and saw pie crusts and just went with it. It was quick and easy and I’ll post my adaptation tomorrow. I had leftover filling and we used it for a dipping sauce. My daughter loved eating it by the spoonful. We dubbed it pizza soup.

Thursday: Fish Sticks and Tater Tots

Friday: Parmesan Corkscrew Pasta with Olive Oil and Peas

Saturday: Grilled Cheese and Tomato Soup

Sunday: Leftovers or you are on your own.

I waited until after I made dinner tonight to make the menu plan for the week. Let me just tell you that these past three nights have been stressful trying to think on the fly and come up with what I am going to make for everyone for dinner every night. Meal planning takes away so much stress and just makes the days and evenings go that much smoother.

Do you meal plan? If not, it could be your New Year’s resolution. It’s a great way to reduce stress and it benefits everyone in your family. I know that just going  three days this week without my menu plan was hectic.  I hope I don’t fall behind again. I know next week the menu will be much better, especially since I’ll have to go shopping for more fresh produce.
